Grilled Lamb Chops with Scotch Bonnet Honey

Ingredients

For the Lamb

  • 1.3 lbs lamb (~6 chops)
  • Salt, to taste
  • Black pepper, to taste
  • Paprika, to taste
  • Cumin, to taste

For the Haitian Green Seasoning

  • Handful of fresh parsley
  • Handful of fresh cilantro
  • Handful of fresh thyme
  • 1 green onion
  • ½ scotch bonnet pepper
  • 3 cloves garlic
  • Juice of 1 lemon
  • Juice of 1 lime
  • Salt, pepper, paprika, cumin, to taste
  • Olive oil, enough for desired consistency (about ½ cup)

For the Scotch Bonnet Honey

  • ½ cup honey
  • ½ scotch bonnet pepper, diced
  • Juice of half a lemon
  • Salt & pepper, to taste

Instructions

    Blend all green seasoning ingredients until smooth. Season your lamb chops with salt, pepper, paprika, and cumin. Coat your lamb chops generously with the green seasoning and let them marinate — the longer the better.

    Combine all scotch bonnet honey ingredients and stir until well incorporated. Let it sit so the heat blooms into the honey.

    Grill your chops at 450°F for 4 minutes each side until medium. Let them rest before plating.

    Drizzle your scotch bonnet honey over the top and finish with a squeeze of charred lemon.

Tips

The longer you marinate the lamb in the green seasoning, the more flavor you'll get. Let the scotch bonnet honey sit while the lamb marinates so the heat has time to bloom. Be careful with the scotch bonnet — a little goes a long way.
