Harissa Honey Brussels Sprouts
Crispy roasted Brussels sprouts tossed in a sweet and spicy harissa-honey glaze. The hot tray technique gives you restaurant-level char at home.

Ingredients
For the Brussels Sprouts
- 1 lb Brussels sprouts, trimmed and halved
- 3 tbsp olive oil, divided
- Salt and pepper, to taste
For the Harissa-Honey Glaze
- 2 tbsp harissa paste
- 2 tbsp honey
- 1 tbsp olive oil
Garnish
- Fresh parsley, chopped
- Red chili peppers, sliced

Preheat the oven to 425°F. Place a baking tray in the oven with a generous drizzle of olive oil and allow it to heat until the oil is shimmering.

Trim the ends off the Brussels sprouts and slice them in half lengthwise. Toss with olive oil and season with salt and pepper.

While the tray heats, make the glaze by whisking together harissa paste, honey, and olive oil in a large bowl. Set aside.

Carefully remove the hot tray from the oven and place the Brussels sprouts cut-side down into the hot oil. Return to the oven and roast for 25-30 minutes, until crispy on the outside and tender inside.

Transfer the roasted Brussels sprouts directly into the bowl with the harissa-honey glaze. Toss until evenly coated.

Finish with chopped parsley and sliced red chili peppers. Serve immediately.
