30-Minute Mediterranean Chicken Skewers
Tender, juicy chicken skewers marinated in a yogurt-spice blend and basted with garlic cilantro herb butter. The yogurt is what makes these so tender — don't skip it.

Ingredients
For the Chicken
- 2 lbs chicken thighs, cubed
- 1 cup plain yogurt
- Juice & zest of 1 lemon
- 3 cloves garlic, minced
- Sazón, to taste
- Adobo, to taste
- Paprika, to taste
- Cumin, to taste
- Coriander, to taste
- Oregano, to taste
- Salt & pepper, to taste
Herb Butter
- 8 tbsp (1 stick) butter
- 3 cloves garlic, minced
- Salt & pepper, to taste
- Paprika, to taste
- Fresh cilantro, chopped

Slice your chicken thighs into thin strips.

Season with sazón, adobo, paprika, cumin, coriander, oregano, salt & pepper.

Combine your yogurt, lemon juice and zest, garlic, and all your seasonings in a bowl and coat your chicken thighs completely. The yogurt is what makes these so tender — don't skip it.

Thread onto skewers and grill at 400°F for 8 to 10 minutes, basting continuously with your garlic cilantro herb butter the entire time.

Pull them off the grill, hit with fresh herbs, and serve over salad, rice, or sauce.
Tips
The yogurt marinade is key — it tenderizes the chicken and helps the spices penetrate. Don't skip the continuous basting with herb butter while grilling; it keeps everything juicy and adds incredible flavor. If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
